Sweet Corn Soft Serve

i’m having an affair. i never thought i’d get so public about this online, but talking about it feels like the right thing to do. my new beau, you ask? corn on the cob. she’s sweet, she’s a little corny, and she’s always got me buttered up. i want corn in and on everything this season, so i guess you could say this relationship is taking over my life.
i knew i needed a corn dessert on rotation this summer, but because i live in a small apartment with no room for another appliance (aka an ice cream machine), i had to get creative.
this is a 5-ingredient plant-based Sweet Corn Soft Serve and it’s almost too easy to make. the olive oil, flaky sea salt, and charred corn on top are mandatory… which actually makes it 7 ingredients, but who’s counting? i really loved this recipe; i think it’s perfect to serve to friends at a summer gathering or to make at home on a warm day.
ingredients (makes 4 servings)
5-6 ears of sweet corn, boiled
1 can coconut milk
1/4 cup coconut cream or heavy cream
1/4 cup maple syrup
1 tsp vanilla
salt to taste
method
slice the kernels from the ears of corn and add them to a pot of water. bring the water to a boil and after 3-5 minutes, strain the water from the corn. add freshly boiled corn kernels to a blender along with the coconut milk, coconut cream or heavy cream, maple syrup, vanilla, and a pinch of salt. blend until smooth. strain the mixture 1-2 times to remove all corn sediment and pour the strained liquid mixture into a container lined with parchment paper - freeze until solid.
should take about 5 hours to freeze. you can also freeze it overnight, but it will take a bit more effort to remove from the container when you’re ready to complete the next step.
once frozen, remove the mixture from the container and cut into cubes and blend in a high-speed blender until smooth and creamy. scoop the soft serve into a chilled glass. top with a drizzle of olive oil, a sprinkle of flaky sea salt, and some charred corn. enjoy!
Can you use fresh corn instead of boiling it?
