you’ve had an al pastor taco, but have you had an al pastor… mocktail? i know it sounds ridiculous but i read somewhere recently that when it comes to food and fashion, we’re as unexperimental as we’ve ever been, picking up just on what’s trending, even though as a culture we’re all obsessed with individuality.
this mocktail gets crazyyyy with smokiness from burnt bay leaf and sweetness from a killer homemade achiote syrup, for that classic al pastor taste. there’s also pineapple juice and NA spirits. if you’re looking for a great cocktail version, try this one - where i got the original inspo! anyway, the point is: i think if we can work on experimenting with unique flavors we might just surprise ourselves, and our tastebuds.
Al Pastor Mocktail
ingredients
2oz NA Mezcal
3oz pineapple juice (from a can)
1oz water
1oz fresh lime juice
1oz achiote syrup
achiote syrup:
1/2 cup water
1/2 cup sugar
1 tsp achiote powder or paste
method
starting by making your homemade achiote syrup. bring sugar and water to a boil over medium high heat. add your achiote powder/paste and reduce to a simmer. simmer for about 10 minutes until sugar is dissolved. let cool and transfer to a jar. to make your mocktail, add all ingredients to a shaker. shake with ice and pour into a glass over ice, garnished with tajin. garnish with pineapple fronds. enjoy!
NOTES
— make sure you keep an eye on your achiote syrup. when i first tested this, i let it simmer for way too long and actually caramelized it? it was honestly crazy, lol. don’t do that.
