my beige flag is that i am very picky when it comes to bananas. if i suspect more than 1-2 brown spots, i’m not eating it. the mushy texture literally gives me the ick. that being said, if a banana is brown or mushy and there’s an opportunity to pulverize it and give it new life in a bread or a drink recipe, i’m absolutely going to do it.
i was at a coffee shop in Spokane, Washington last weekend that had a Banana Milk Latte recipe on their menu and upon reading those words i knew i had to create my own version at home. banana milk is a korean delicacy, but can be made at home with just a few ingredients!

ingredients
1 cup banana milk
1 banana, sliced into chunks
1/2c water
1/2c milk of choice
1/4 tsp vanilla extract
2-3 tsp maple syrup (depending on desired level of sweetness)
2 shots espresso
ice
method
start by making your banana milk. add bananas, milk, water, maple syrup and vanilla to a blender (you can also use an immersion blender). blend until smooth and strain out any chunks - i like to strain twice. to a glass, add ice and fill with milk. top off with espresso. stir and enjoy!
