Brûléed Grapefruit Sour
ingredients
makes 2 mocktails
1/2 grapefruit, cut in half (for brûlée topping)
1/4 cup water
1/2 packet grapefruit LMNT
3 oz freshly squeezed grapefruit juice
1.5 oz lemon juice
3/4 oz maple syrup or simple syrup
2 oz NA spirit
1 oz aquafaba (the juice in a chickpea can, for froth)
ice
1–2 teaspoons sugar (for brûléeing)
method:
sprinkle sugar over the cut side of the grapefruit half. use a kitchen torch to caramelize the sugar until it turns golden brown and forms a crispy topping. let it cool while you make the drink.
in a shaker, combine water and the grapefruit LMNT packet. stir until dissolved. add the grapefruit juice, lemon juice, maple syrup, NA spirit, and aquafaba to the shaker. shake vigorously without ice (dry shake) to create a frothy texture from the aquafaba.
then, add ice to the shaker and shake again until chilled. strain into a coupe glass.
float the brûléed grapefruit slice on top.
