hi! happy tuesday! comin at ya live with a new recipe that screams summer happiness.
this is my cherry almond loaf. it’s a one-bowl, no refined sugar bake that’s honestly my favorite way to make breakfast feel special in the summertime. frozen cherries (you can use fresh, but i find frozen are easier to work with and develop more flavor) are folded into a greek yogurt + butter batter, resulting in the most tender, fluffy loaf you’ve ever made.


the 2 full teaspoons (!!!) of almond extract gives it this rich, nutty vibe that feels way fancier than the effort you’re putting in. the thing is, if i’m not absolutely attacked by almond flavor in an almond loaf, i don’t want it. sue me!!!
the oat crumble on top + lack of refined sugar makes this loaf feel like a very responsible choice for breakfast, but honestly we ate it during every hour of the day and it was perfection.
i just love making this on a Sunday so i have something homemade to slice up all week. i like to top mine with more yogurt and a homemade cherry compote (or even fresh macerated cherries) and of course, serve with a hot cup of coffee. it’s also perfect in the afternoon or in the evening with tea. i hope you enjoy!
