hi! happy friday! i want you to know that i literally could not believe how good this cherry stracciatella ice cream turned out. like… i took one bite and immediately lost all sense of self. i’m not sure what possessed me to make ice cream last week but i’m so glad i listened to whatever the urge was because OH MY GOD.

and btw. i am not an ice cream professional. i’ve made maybe… three flavors in my life? this was my first time trying a custard base and lemme tell ya, i was stressed. i nearly forgot the brown sugar and had to panic-dump it in while the cream was already heating up, but we survived.

it starts with a fresh cherry compote, then comes the custard: tempering egg yolks (stressful but easy) and once it’s thickened the cherries go in and we chill er up.

churning (in your ice cream machine) is obviously the best part and just when you think we’re done, we swirl in melted dark chocolate that shatters into silky little ribbons the second it hits the cold cream, like magic.

i highly recommend making this. even if you’re a beginner. especially if you’re a beginner. because the reward is absurd.
