ever since getting Frankie, my meals have been whatever is in the fridge at any given moment. brie cheese and pickles for lunch? sure! cottage cheese and dijon mustard with week-old deli turkey? you betcha! between the walks, training, and general puppy madness, i haven’t been eating as well as i used to. cooking for myself on a daily basis just hasn’t been a priority.
but while i was in LA, i grabbed a chopped farro salad at Erewhon, and it reminded me how good a simple, hearty meal can make me feel. so here we are, making a big batch of it for the week—an easy, nourishing and protein-rich salad that requires minimal effort but still makes me feel like i am slowly getting back to normalcy.




this is one of those salads that actually gets better as it sits—hearty farro, crunchy apples, nutty hemp seeds, and chewy golden raisins (or dates, your call) all tossed in a tangy champagne vinaigrette. pecorino romano on top for a salty punch, and if you want to add protein, perfectly juicy chicken breast is the move. make a big batch and eat it all week.
