every year around the holidays i comit to making a dish that takes me less than 20 minutes but is still somehow everyone’s favorite appetizer at the end of the night. last year i came up with something i call savory Christmas Crack - it’s a combination of pomegranate seeds, castelvetrano olives, walnuts, pine nuts and fresh dill.
and this year instead of just eating out of a bowl with a spoon, i’ve decided to pile on top of a honey glazed wheel of baked brie. this recipe is a holiday gift for all of my procrastinators.
Christmas Crack Baked Brie

ingredients
1 wheel of brie cheese
3-4 tbsp honey
1/4 cup chopped walnuts
2 tbsp pine nuts
1/4 cup pomegranate arils
5 castelvetrano olives, chopped
fresh dill, chopped
crackers or toasted baguette slices, for serving
pinch of flaky salt
method
preheat your oven to 400°f (200°c).
score the top of the brie in a crosshatch pattern and place it in a small baking dish. drizzle with honey, ensuring the top is well coated.
bake for 10 minutes, or until the brie begins to soften and melt slightly.


while the brie bakes, prepare the "Christmas Crack" topping: combine the walnuts, pine nuts, pomegranate arils, and chopped castelvetrano olives in a small bowl.
remove the brie from the oven and carefully spoon the topping over the cheese. return the dish to the oven and bake for another 5-7 minutes, or until the brie is completely melty and gooey.
remove from the oven and sprinkle with fresh chopped dill and a pinch of flaky salt.
serve warm with crackers or toasted baguette slices for dipping.


I made this at a Christmas party and it went down a treat! I scored a snowflake design on the brie to make it extra festive and had some figs and crackers on the side - delicious 🎄❤️
