Crunchy Cabbage Spring Salad

vibrant, crunchy, sweet & tangy. it screamssss spring!

this salad screeeeeams spring!! i think a bunny rabbit would go feral for it, and i mean that in a good way.

i went to the grocery store on sunday at peak shopping hour and somehow ended up at home with a largeeee head of cabbage. i wanted to use it all at once so it didn’t go to waste in the fridge. because cabbage is so crunchy, it does great sitting in the fridge throughout the week soaked in a dressing without going bad; it honestly only gets better. this is one of the most beautiful salads i’ve ever made. it’s a vibrant, packed with crunch, sweetness, and a creamy, tangy dressing.
