you know when you make a meal and you just can’t stop eating it? i think it’s called a hyperfixation meal… but this feels like more than it. it becomes the most exciting part of your day and sometimes, even on the hard days, is what gets you out of the bed in the morning? that’s this Fall Bean Chopped Salad.
hear me out: i believe it’s a form of self care, making something that i know will nourish me during moments when i feel a little stressed or short on time. and during this season i seem to have a lottt of those moments, lol.
it has all of the best fall flavors like apples, dates and walnuts, beans for protein and is tossed in a warm shallot vinaigrette (that i want to live in my fridge all throughout the year) and keeps getting better as it sits in the fridge. taking care of yourself can be as simple as prepping a meal to get you through the week.
