this drink will change your life, i swear by it
if you live in the bay and you’ve ever passed Sol food on the freeway, you know the ritual: you get a limeade. bad mood? limeade. great mood? limeade. it doesn’t matter what kind of day i’m having, if i’m anywhere near Sol food, i’m stopping for one. that drink has emotional support beverage status in my life, and it inspired me to figure out a version i could make at home.
not surprisingly, this grapefruit + thyme limeade turned into one of the best drinks i’ve ever made. like, genuinely, oh my god. grapefruits are at the tail end of peak season right now and the combo of bright citrus with a subtle herb is insanely refreshing. i like to chug mine of a giant mason jar after a long walk.
the real hero here is the grapefruit + thyme simple syrup. you make it once and it lives in your fridge for months, which means you’re always five minutes away from a really good limeade. and if you’re feeling a little more cocktail-adjacent, it doubles as a syrup for margaritas or honestly any citrusy cocktail/mocktail you can dream up.
