to me, September will always be Back to School month. i miss the days of binder shopping at target and pencil shopping at staples. the type of pencil you wrote with as a student says a lot about you. i wrote exclusively with titanium mechanical pencils… judge me, i dare you.
i was a student for 20+ years and i can tell you the one thing i don’t miss: waking up at the ass crack of dawn for zero period history class. somehow, as an adult, i still find the motivation to wake up early as hell everyday. go me! so fun!! habits! mindset! health! and wellness!
i wake up earlyyy to train for my triathlon. some of my workouts are quite long (especially the bike rides), and once i get home the idea of making breakfast feels like an impossible chore. it’s not so much the cooking as it is the clean up. by the time i’m finished, i’ve lost an entire hour of valuable time.
SO! i’ve been making freezer sandwiches on Sunday’s to prep for the week ahead. but, in honor of September being Back to School month, i’m calling them Green Eggs & Ham Sandwiches. because, you know, the book…
the eggs are made with a spinach loaded pesto so you can get your greens in first thing and are sandwiched between a slice of ham and buttered english muffins. i eat them, relaxed, at the table before my workday starts just like a kid before school. i hope you love them as much as we do!
