fresh af and easy to make during the workday to keep lunch interesting, but also perfect when hosting friends or heading to a spring party!
Herby Snap Pea Chopped Salad
ingredients
12oz snap peas (~2 heaping cups)
1 palmful mint
1 handful basil
3 dates
1 small bulb fennel, sliced thin
cheddar cheese, sliced (measure with your heart)
1/3 cup pine nuts
yogurt, for the bottom of the plate (optional)
for the dressing:
4tbs olive oil
3tbs white wine vinegar
a few swigs of fish sauce
salt and pepper
method
add snap peas, mint, basil and dates to a cutting board and CHOPPPP. add to a bowl with thinly sliced fennel, cheese & pine nuts.
add olive oil, white wine vinegar, fish sauce, salt and pepper.
mix it up and throw it over some yogurt.
eat with crackers, bread or on its own! enjoy!
