Marinated Tomato & Apricot Labneh Dip
fresh beautiful perfect summer in every bite!!!
apricots and tomatoes were everywhere i looked in france. market stalls overflowing with sunset colors, like little edible paintings. i kept imagining how i wanted to eat them: not in an overcomplicated way, just in their purest form, with something creamy and tangy to hold it all together.




labneh has to be one of my favorite blank canvases in cooking. it’s thick, salted, and so rich it feels like cheese, but with the brightness of yogurt. it’s also stupid easy to make it at home. anyway, this dip brings my craving to life. it’s juicy, herby, a little sweet, a little sharp, and i could very much eat the whole thing in one sitting. i won’t, but i could (and almost did).


i also think this is truly one of the best dishes you could bring to or serve at a summer gathering. ok, enough! here’s the recipe:
