hi! happy tuesday! i’ve been a little MIA - sorry! dog mom life has consumed me! but things will be returning to business as usual this weekend with a Morning Report on Friday and a What I’m Making This Week on Sunday.
i wanted to hit y’all with a mid-week recipe, though, because this is the ultimate high-protein, high-fiber lunch that i think we should all be making right now. hope you love! it’s creamy, crunchy, a little tangy, and loaded with flavor. plus, for my meal prep girlies, it just gets better as it sits in the fridge.
