it’s important to me that people who choose to. drink a little less during the holiday season feel like they have options. sometimes showing up at a party can feel stressful and isolating. and just because you’re limiting your alcohol consumption doesn’t mean you need to sacrifice flavor or complexity.
so this is my miso gingerbread mocktail — it’s 6 ingredients with a subtle umami twist. your favorite gingerbread cookies soaked in milk and added to a shaker with white miso paste and a homemade ginger spiced simple syrup. no matter how you choose to show up, treat yourself. you deserve it.
Miso Gingerbread Mocktail

ingredients (makes 1)
1 oz maple syrup
1 tsp white miso paste
2oz Seedlip Spice
1/2 oz ginger simple syrup (this will make enough for 6-8 drinks)
fresh ginger
1 cinnamon stick
pinch of allspice
zest of half an orange
1/2 cup sugar
1/2 cup water
3 oz chilled whole milk, infused with gingerbread cookies and strained
crushed gingerbread cookies for the rim
maple syrup, for rimming
cinnamon stick and small gingerbread cookie, for garnish
method
in a small saucepan, combine 1/2 cup water, 1/2 cup sugar, a few slices of fresh ginger, 1 cinnamon stick, a pinch of allspice, and the zest of half an orange. simmer over low heat until the sugar dissolves and the flavors meld, about 5 minutes. strain and let cool.



place 3-4 small gingerbread cookies in a bowl and pour 3 oz whole milk over them. let soak for 10-15 minutes, then strain out the solids, pressing gently to extract the milk. chill the infused milk in the refrigerator.
dip the rim of your serving glass into a small plate of maple syrup, then coat it with crushed gingerbread cookies.



in a shaker, whisk together the miso paste, maple syrup, and ginger simple syrup until smooth. add the chilled, infused milk and shake to combine.




pour the mixture into the prepared glass over ice (if desired, but it could water the drink down). garnish with a cinnamon stick and a small gingerbread cookie.
