Mortadella, Burrata, Basil, Peaches & Chunky Honey Pistachio Sandwich
it's a mouthful... and quite possibly THE sandwich of the summer.
the past 6 weeks my life has consisted of watching love island… i believe it’s only making me smarter, as it’s a necessary cultural observation. that said, i’ve also been trying to add books into the mix so i can stay reading. but i’m not gonna go crazy… i’m sticking to beach reads (literally, i just finished a book called “Beach Read”) and we all know a good beach read needs a good beach sandwich as its companion. mortadella is having her momentttt right now, so we’re stacking some on a toasted ciabatta loaf and topping it with burrata, basil, peaches and a chunky honey pistachio mix for the best loaded sandwich of the summer. and btw, the book? not necessary - you’re absolutely allowed to re-binge love island while you eat it.


ingredients
bread (i used a mini ciabatta loaf, but any bread will work!)
mortadella slices
burrata
fresh basil leaves
olive oil
1/4c pistachios
1 tbsp honey
salt & pepper
1 peach, sliced
method
begin by making your pistachio mixture. chop pistachios roughly and mix with 1tbsp honey, a drizzle of olive oil and a sprinkle of salt. to toast your bread, drizzle with olive oil and place on a hot pan face side down until golden brown. then, assemble your sandwich. on one side, add mortadella and top with burrata (sprinkle salt and crack fresh black pepper on top), fresh basil leaves and pistachio mixture. on the other side, add more mortadella and peach slices. enjoy!
