all you need for a shrub in the winter is your fave citrus + sugar + acv and any little extras! give this one a try. it makes the BEST mocktail.
Non Alcoholic Grapefruit Shrub
ingredients
1 grapefruit
1 pomelo (large green looking grapefruit!)
1 cup apple cider vinegar, heated on the stove
1 cup granulated sugar
5-7 sprigs of rosemary
one large knob of ginger, sliced
grapefruit wedge + sprig of thyme (optional garnish)
method
wash grapefruit & pomelo. peel their skin and add citrus rind to to a heat proof jar. then, fully peel the grapefruit/pomelo and get as much of the actual fruit removed from the pith as possible. set aside.
add sugar into the jar on top of the citrus peels and muddle until the sugar is well incorporated with the citrus peels.
then, add about 1 cup of the grapefruit and pomelo fruit as well as rosemary and ginger slices. muddle.
place ACV in a pot over low heat and bring to a very light simmer. then, pour over your mixture. mix really well.
close the jar and shake/mix even more until it’s fully incorporated. label the jar and let this rest in the fridge from 24hrs-1 week. the longer you let it rest, the more flavor it will have.
when you’re ready to drink it, strain the shrub into a mason jar and enjoy with sparkling water + grapefruit/thyme to garnish!
