Peach & Yuzu Pickled Onion Panzanella
making beautiful and delicious food doesn't have to be hard!
it legit takes me 5 minutes to crush one of these salads, it’s that good.
ingredients
1 peach, sliced thin
1/2 red onion, sliced thin
3/4c apple cider vinegar or champagne vinegar
1/4c yuzu (i get mine from @theyuzuco)
goat cheese
5-8 fresh basil leaves
hot honey
1/2 a loaf of day old bread
olive oil + salt
method
start by slicing your red onion and add to a heatproof container. bring your vinegar to a simmer and pour over the onions along with yuzu juice. seal the container, shake and set aside. you can complete this step the day before or about 30-45min before you plan to serve. you want to give the onions enough time to marinate/pickle slightly.
preheat your oven to 400 degrees and after removing the crust from your bread, slice into cubes. add to a parchment lined baking tray and drizzle with olive oil and salt. bake in the oven until **just crispy. if you overdo them, they’ll be kind of tough to eat!
once your croutons are out of the oven (10ish min) and cooled off, start to build your salad. add croutons to a plate with peaches, pickled onions, goat cheese, basil and hot honey. enjoy!
