i suffered with adult acne for years and years and years. the two things people told me over and over were to have patience and drink hibiscus tea. so while this drink isn’t a cure-all, it is a skin-supporting, genuinely delicious way to use seasonal rhubarb and sip something pretty throughout the day.
the prep is simple: make a rhubarb, vanilla, and honey syrup (no straining required), steep a few bags of hibiscus tea, and stash both in the fridge for easy assembling all week long. pour over ice, top with a huge handful of mint. like a mojito for your skin!!
Rhubarb Hibiscus Refresher
makes 1 large mason jar drink or 2 smaller servings
ingredients
Rhubarb Vanilla Honey Syrup
makes enough syrup for ~5 drinks
1 cup chopped rhubarb (fresh or frozen)
1/2 cup water
1/3 cup honey (more to taste)
vanilla from 1/2 a vanilla bean pod or 1/2 tsp extract
add everything to a small saucepan and bring to a boil. mix regularly. reduce the heat and simmer for 8–10 minutes, until the rhubarb is soft and broken down. (immersion) blend until smooth and pour into a jar. no need to strain!
Hibiscus Tea
below makes a large portion of hibiscus tea… if you want to make a smaller portion, just use one tea bag and enough water to fill a mug
2-3 hibiscus tea bags or 1/4 heaping cup dried hibiscus
3 cups hot water
steep for 5–7 minutes. let cool, then chill in the fridge while you make the syrup.


method:
in a large mason jar, combine:
2–3 tbsp rhubarb vanilla honey syrup
1 oz fresh lemon or lime juice
lots of ice
chilled hibiscus tea (about ¾ cup or to fill)
a big handful of fresh mint
stir well!!
