Rice Noodle Miso & Veggie Mason Jar Soup
nourishing soup that you can eat in minutes!! in a mason jar!!
i’m so excited about this recipe. there’s nothing i love more than a hot soup on a cold day and the fact that this soup can be prepped for weekly lunches or dinners makes it that much more special. also the fact that it takes, like, 10 minutes to put together and 5 minutes to “make” is the definition of leisure.
recently, i brought it with me to my swim club. after my swim, i poured hot water into the jar and let the soup rest while i hopped in the sauna. once i was all changed and warm, i sat in the kitchen window and drank it with a view of the bay. absolute perfection.
if you go into the office or need to eat lunch in front of your computer (me most days), you can use the above visual and just… pretend. at the end of the day, we’re still eating the same soup! btw, this can absolutely be made in a bowl for dinner (pictured below) if you’re not feeling the mason jar vibe!
