now that it’s warmer, people just magically start wanting to hang out more. and if people are coming over, there’s going to be food, and it’s going to be dank. this is my new “i have friends coming over for brunch in 20 minutes and need to make them something impressive but chill” meal.
cheese-crusted tortillas, smashed sausage, quick homemade pesto, a fried egg — it comes together fast, doesn’t make a huge mess, feeds a crew, and pairs well with a massive cup of black coffee.


i think the part i love most about this recipe is that it really only happens in two pans. plus the pesto can be prepped the night before. the inspiration is a crossover between a sandwich i had in Portland, arayes, and tacos i ate in Mexico City.
