beans are kind of having a moment and if you’re not on the brothy bean train yet, what are you doing? listen!! it is possible to be hot and make dinner with minimal effort, and these simmered pinto beans prove it. throw everything in a pot, let it do its thing, and two hours later, you’ve got a rich, flavorful, cozy bowl of beans (plus leftovers, because we love efficiency). perfect for those midweek nights when you want something homemade but absolutely do not feel like cooking.

these brothy beans are slow-simmered until rich and flavorful, packed with veggies and just the right amount of spice. they’re cozy and perfect for scooping up with tortillas (or tortillas chips) and for topping with all the good stuff!
