Spring Roll Chopped Salad
everything you love about fresh spring rolls, but easier to make & preppable
there’s a very specific kind of peace that comes from knowing your fridge is full of something already made. i am a sucker for routine, so i just make one giant salad every sunday and let it feed me for days.

this one’s inspired by my love for spring rolls. all the fresh spring veggies plus a chili peanut dressing that i’d honestly drink. t’s not about packing in protein, it’s actually about fiber. hot take: protein has taken center stage for too long. let’s give fiber her moment. she keeps you full, she supports your hormones, she gets things… moving.

besides being so easy to make, it actually tastes better after a night in the fridge. sunday salads are a way to mark the start of the week, not with stress, but with something that feels good to eat.`
