Strawberry Cold Brew Float
for when you’ve just spent 10 days with your family and need two things: caffeine and sugar.
cold brew. ice cream. strawberry syrup. it’s dessert. it’s coffee. it’s survival. you can make it like a float or treat it like an affogato!!
Strawberry Cold Brew Float
ingredients:
strawberry basil syrup:
2 cups strawberries, halved
¾ cup sugar
¾ cup water
1 small handful basil
add strawberries, sugar, water, and basil to a small saucepan. bring to a simmer and cook for 10–15 minutes, until the strawberries look pale and mushy and your kitchen smells like a fancy soda shop. strain and cool.
to assemble (float style):
ice
2 diced strawberries (fresh)
2–3 tbsp strawberry basil syrup
cold brew coffee (enough to fill most of the glass)
1-2tbsp milk of choice
1 big scoop strawberry (or vanilla) ice cream
layer diced strawberries and syrup at the bottom of a glass. fill with ice, pour over cold brew and a bit of milk and stir. finish with a scoop of strawberry (or vanilla) ice cream. i ate some ice cream off the top then stirred it in!
to assemble (affogato style):
2–3 tbsp strawberry basil syrup
2 diced strawberries
1 scoop vanilla ice cream
1 shot espresso, hot
add syrup and strawberries to a small cup or bowl. top with ice cream, then pour over a fresh shot of espresso.
