The Perfect Winter Salad

simple & chef's kiss

for all of my people who sign up to bring a salad to the party. this one is inspired by a salad from Che Fico’s Fall 2023 menu and it’s chef’s kiss. lettuce, herbs, nuts & fruit tossed in a simple vinaigrette.

The Perfect Winter Salad

ingredients

• 1 head radicchio

• 1 bunch basil

• 1 head butter lettuce

• 1/2 honeycrisp apple

• 1/4 pomegranate, seeded

• goat cheese (measure with your heart)

• 1/4c toasted pine nuts

method

• wash and separate your lettuce and basil leaves. i kept mine whole, and halved the big pieces, but you could also chop everything up.

• for the vinaigrette, i like to start by adding a VERY small amount of boiling hot water to about 4tbs honey and mix. then, add 1/3c olive oil to a bowl and slowly whisk in the honey. add lemon, salt and pepper (to taste) until it’s to your liking!

• throw apple, cheese and nuts on top of your lettuces and toss in the vinaigrette. enjoy!
