Winter Citrus & Arugula Salad

ingredients
arugula
1 grapefruit, peeled and segmented
1 blood orange, peeled and segmented
handful fresh mint leaves, torn
1 small fennel bulb, thinly sliced
1/4 cup pistachios, roughly chopped
1/4 cup crumbled feta cheese
1/4 cup pitted castelvetrano olives, halved
for the citrus vinaigrette
1 blood orange, juiced
3 tbsp olive oil
1 tbsp champagne vinegar
1 tsp fresh lemon juice
1 tsp maple syrup
salt and pepper, to taste
method
in a large bowl, combine the arugula, grapefruit, blood orange, mint, fennel, pistachios, feta cheese, and olives.




in a jar, whisk together the blood orange juice, olive oil, champagne vinegar, lemon juice, and maple syrup. season with salt and pepper to taste.
drizzle the vinaigrette over the salad, toss gently, and serve immediately.
