hello! hi! happy june! how’s everyone doing? welcome back to What I’m Making This Week, my bi-monthly roundup of three recipes that make life feel a little more doable, even when you’re tired.
i’ve been thinking a lot about how easy it is to be grateful for better weather, just driving along the coast or watching the dog play. but also how hard it is to feel anything when you're overwhelmed, and the second you finish doing the dishes, there’s somehow a new pile waiting for you.






so this week’s recipes are kind of my way back to feeling !! they’re beautiful and easy to make, the perfect companion for melting into your couch and watching tv… i’ve binged 3 shows in the last 7 days and i’m not ashamed. these recipes are not about having it all together, they’re about doing the least… intentionally.



on deck this week is a spring roll chopped salad that somehow gets better the longer it sits in your fridge, a seared salmon jacket potato that is actually the perfect dinner for one (or two!), and a pineapple skin tea mocktail that proves your compost bin is sitting on untapped potential.

What I’m Making This Week
Seared Salmon Jacket Potato
this recipe is the second in my new series Dinner For One, where we romanticize cooking for yourself and no one but yourself. this recipe is as low-effort as it is high-reward: crispy-skinned salmon rubbed with a chili powder blend, perched on a baked potato atop a green goddess yogurt sauce.


most of the time, you’re just babysitting the potato in the oven. active cook time is maybe fifteen or twenty minutes. it’s by far one of the best dinners i’ve made in a miiinute. and the pics don’t really do it justice but i find that some of my favorite recipes are the ugliest. Spring Roll Chopped Salad
i love spring rolls and i love making salads on sunday that’ll last me multiple meals throughout the week so this was an obvious flavor combination i had to hit. the thing i love about it is that it’s packed with fiber and never gets soggy.


it also has cold soba noodles which are very underrated making it a full meal (carbs! protein! tons of veggies!) for anytime of day. we’ve truly just been pulling ours out of the fridge every few hours to snack on throughout the week. GET THE RECIPE HERE!
Pineapple Skin Tea
i really love low-waste recipes sooo much and now that pineapple is in season you know i’m going to be cutting it up weekly for snacking on. thankfully i found a use for pineapple skins before you compost them. throw them in water with a bunch of other stuff and make this really delicious tea that’s also incredibly functional.


it makes enough servings for multiple days of drinks and i even included a fun little mocktail recipe if you want to get fancy with it. GET THE FREE RECIPE HERE!!
