Winter Crunch Chopped Salad
a hearty, flavorful chopped salad with a balance of crunch, sweetness, and spice
you know when you make a meal and you just can’t stop eating it? well, i’ve done it again (find my fall chopped salad here). this is my winter chopped salad. it’s a form of self care, making something that i know will nourish me during moments when i feel a little stressed or short on time - which happens a lot more often this time of year.
it has all of the best winter flavors like pomegranate and delicata squash. there’s pumpkin seed and walnut for crunch, butter beans for protein… plus halloumi cheese and escarole. it’s tossed in a pomegranate vinaigrette and keeps getting better as it sits in the fridge.
