hiiii! welcome back to What I’m Making This Week, my biweekly newsletter where i share three recipes that are getting me through the week and occasional chaos that comes with it.
i got home from Mexico a couple of weeks ago and while there i feel like everything slowed down. i was giving off duty dog mom in a big way. slow mornings, long meals and very little thought about my inbox or to-do list. it reminded me how good it feels to be present in the sunshine with good food and friends. then, it ended… and obviously the moment i got home i did four loads of laundry at the laundromat and made an aggressive Notion calendar for the week, but still. i’m trying to hold on to the softness.






this week’s recipes were built around that idea: that food doesn’t need to be performative to be beautiful. there’s a Spring Green Quiche with Herbs & Feta that’s perfect for a brunch or just a weekday breakfast eaten at your desk. a Rhubarb & Hibiscus Refresher that supports your skin (!!!) and uses Rhubarb during peak ripeness. and a Steak Dinner with Spring Veggies and a Homemade Buttermilk Ranch that exists purely for the people who want a meal that’s host-worthy without the stress of actually hosting people.

What I’m Making This Week
Spring Green Quiche with Herbs & Feta
this quiche is silky, herby, and bright green from a blend of spinach, basil, and dill. it’s a recipe that can feed friends but also works for a sort-of meal prep situation during the week and when i tell you i’ve never enjoyed a quiche as much as this one…


the best part is that the filling is literally as simple as just throwing everything into a blender and pouring it into a par-baked pie crust. it also uses whatever leftover herbs you have in your fridge and is incredibly versatile. GET THE RECIPE HERE!
Strip Steak with Spring Veggie Salad + Buttermilk Ranch
there is truly nothing more thrilling than making a beautiful dinner just for me, completely alone. this one is a pan seared NY strip steak with a spring veggie salad dressed in a homemade buttermilk ranch. also, i am literally never buying ranch dressing again. nothing compares to homemade.
this recipe makes enough for one perfectly large meal, but you can easily make it for two and there’s enough for salad leftovers the next day as well. i love making easy, nourishing meals for dinner during the week and this is one of those but it’s also elevated af. like… you don’t need to host a dinner party to make a steak! Rhubarb & Hibiscus Refresher
i suffered with adult acne for years and years and years. the two things people told me over and over were: have patience and drink hibiscus tea. so while this drink is absolutely not a cure-all, it is a skin-supporting, genuinely delicious way to use seasonal rhubarb and sip something pretty throughout the day that might also promote healthy skin.
