i’ve been thinking… there was a stretch when i was making 4 mocktails a week, going so hard on the syrups and dramatic garnishes. most of it was my job, but part of it was that not drinking became my whole personality.
and while it served me, i also kind of lost the plot. last fall i got really burnt out on making drinks and over the last seven months i’ve been trying new things and letting myself experiment. that’s part of why you’ve been seeing more and more food recipes here. i started branching out not just because i was worn down on mocktails, but because i wanted to feel excited again. to create without boxing myself in. a reminder that it's okay to evolve; what once feels like the thing doesn’t have to be your thing forever.
i still live an alcohol free lifestyle and i am a beverage girlie through and through. but i also like a bitters & soda a couple times a year. and the truth is, for all the fancy drinks i post, i’m usually just craving a diet coke or a sparkling water with lime. i’ve been slowly getting back into making drinks (which feels exciting!!!!), but this time without the pressure to be profound or perfect.

Honey & Tahini Latte
a few weeks ago i saw someone post about a honeycomb latte with tahini and instantly knew i needed it in my life. but instead of going full latte mode, i made a quick, at-home version.
Cherry Cold Foam Diet Coke Mocktail
on my last diet coke mocktail video, a lot of you clocked the fact that i had cream in my hands in the video…and didn’t use it. you were pressed (fair), but i made a gametime decision to keep that one creamless. luckily, i’ll always take an excuse to make another mocktail, so here’s the cherry cream version. fizzy and a little indulgent (but still naturally sweetened!). perfect for spring.

ingredients
for the cherry syrup:
1 cup frozen cherries
2 tbsp honey (or maple syrup)
½ tsp vanilla extract
pinch of sea salt
splash of water
for the mocktail (per drink):
juice of 1 lime
2 tbsp cherry syrup (with some cherry chunks!)
¾ cup diet coke
1 oz decaf espresso or strong brewed coffee
2 tbsp heavy cream
1 tsp cherry syrup (strained, no chunks)
method
in a small saucepan, combine cherries, honey, vanilla, salt, and a splash of water. simmer on low for 10–15 minutes, stirring occasionally and smashing the cherries gently as they cook down. once thick and jammy, remove from heat and let cool. store in the fridge for up to 5 days.
in a small bowl or frother, whisk together heavy cream and 1 tsp of strained cherry syrup until frothy but still pourable.
in a tall glass, add the lime juice and 2 tbsp of cherry syrup (with some of the chunky bits). top with diet coke, then slowly pour in the espresso or brewed coffee.
pour the cherry cream over the back of a spoon to float it on top and create those dreamy layers.
serve immediately and give it a gentle stir for some swirllll.
